Ingredients
For Dosa Batter
- 2 cups rice (regular or idli rice)
- ½ cup urad dal (black gram)
- ¼ cup poha (flattened rice)
- ¼ tsp fenugreek seeds
- Salt to taste
- Water as needed
- Oil or ghee for cooking
For Red Chutney (Spicy Garlic Chutney)
- 3-4 dried red chilies (soaked in warm water)
- 1 tbsp chana dal (Bengal gram)
- 4-5 garlic cloves
- 1 small onion (chopped)
- 1 small tomato (chopped)
- ½ tsp tamarind paste
- Salt to taste
- 1 tbsp oil
- Water as needed
For Potato Masala Filling
- 3-4 medium potatoes (boiled and mashed)
- 1 onion (sliced)
- 1 green chili (chopped)
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 tsp chana dal
- 1 tsp urad dal
- A few curry leaves
- ¼ tsp turmeric powder
- Salt to taste
- 1 tbsp oil
- Fresh coriander leaves (chopped)
- 1 tbsp lemon juice
Instructions
Step 1: Prepare Dosa Batter
- Wash and soak rice, urad dal, poha, and fenugreek seeds in water for 6-8 hours.
- Drain and grind to a smooth batter, adding water as needed.
- Add salt and let it ferment overnight or for 8-12 hours.
Step 2: Make Red Chutney
- Heat oil in a pan, add chana dal, garlic, and onion. Sauté until golden.
- Add tomatoes and cook until soft.
- Blend with red chilies, tamarind paste, salt, and water to form a smooth paste.
Step 3: Prepare Potato Masala
- Heat oil in a pan, add mustard seeds, cumin seeds, chana dal, urad dal, and curry leaves.
- Add onions and green chili, sauté until soft.
- Add turmeric powder, mashed potatoes, and salt. Mix well.
- Add lemon juice and coriander leaves. Mix and keep aside.
