Mysore masala dosa

Mysore Masala Dosa is a South Indian delicacy known for its crispy texture, spicy red chutney, and flavorful potato filling. Here’s a step-by-step recipe to make it at home.

Ingredients

For Dosa Batter

  • 2 cups rice (regular or idli rice)
  • ½ cup urad dal (black gram)
  • ¼ cup poha (flattened rice)
  • ¼ tsp fenugreek seeds
  • Salt to taste
  • Water as needed
  • Oil or ghee for cooking

For Red Chutney (Spicy Garlic Chutney)

  • 3-4 dried red chilies (soaked in warm water)
  • 1 tbsp chana dal (Bengal gram)
  • 4-5 garlic cloves
  • 1 small onion (chopped)
  • 1 small tomato (chopped)
  • ½ tsp tamarind paste
  • Salt to taste
  • 1 tbsp oil
  • Water as needed

For Potato Masala Filling

  • 3-4 medium potatoes (boiled and mashed)
  • 1 onion (sliced)
  • 1 green chili (chopped)
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 tsp chana dal
  • 1 tsp urad dal
  • A few curry leaves
  • ¼ tsp turmeric powder
  • Salt to taste
  • 1 tbsp oil
  • Fresh coriander leaves (chopped)
  • 1 tbsp lemon juice

Instructions

Step 1: Prepare Dosa Batter

  1. Wash and soak rice, urad dal, poha, and fenugreek seeds in water for 6-8 hours.
  2. Drain and grind to a smooth batter, adding water as needed.
  3. Add salt and let it ferment overnight or for 8-12 hours.

Step 2: Make Red Chutney

  1. Heat oil in a pan, add chana dal, garlic, and onion. Sauté until golden.
  2. Add tomatoes and cook until soft.
  3. Blend with red chilies, tamarind paste, salt, and water to form a smooth paste.

Step 3: Prepare Potato Masala

  1. Heat oil in a pan, add mustard seeds, cumin seeds, chana dal, urad dal, and curry leaves.
  2. Add onions and green chili, sauté until soft.
  3. Add turmeric powder, mashed potatoes, and salt. Mix well.
  4. Add lemon juice and coriander leaves. Mix and keep aside.

Step 4: Make the Mysore Masala Dosa

  1. Heat a tawa (griddle) and pour a ladle of batter, spreading it in a circular motion.
  2. Drizzle some oil or ghee around the edges.
  3. Spread a layer of red chutney over the dosa.
  4. Place a portion of the potato masala in the center.
  5. Fold the dosa and serve hot with coconut chutney and sambar.
