Mysore Pak is a rich and delicious Indian sweet made with gram flour, sugar, and ghee. It has a melt-in-the-mouth texture and is a popular treat, especially in South India.
Ingredients
- 1 cup besan (gram flour)
- 2 cups sugar
- 1 cup water
- 1 cup ghee (clarified butter)
- ½ cup oil (neutral-flavored like sunflower or peanut oil)
Instructions
Step 1: Roast the Besan
- Sieve the besan to remove lumps.
- Heat a pan on low flame and dry roast the besan for 3-4 minutes until fragrant (do not brown). Keep it aside.
Step 2: Prepare the Sugar Syrup
- In a heavy-bottomed pan, combine sugar and water.
- Boil on medium heat until it reaches a one-string consistency (when you take a little syrup between two fingers and pull, it should form a single thread).
Step 3: Add Besan and Ghee Mixture
- Reduce the flame to low and gradually add the roasted besan while continuously stirring to prevent lumps.
- In another pan, heat the ghee and oil together.
- Slowly pour the hot ghee-oil mixture into the besan-sugar mixture while stirring continuously.
- Keep cooking and stirring until the mixture thickens and starts leaving the sides of the pan.
Step 4: Set and Cut
- Pour the mixture into a greased tray or plate.
- Level it quickly and let it set for about 15-20 minutes.
- Once slightly cool but still warm, cut into square or diamond shapes.
- Let it cool completely before serving.
